Can chocolate look more tasty due to data-driven modelling?

Complex processes in technology and real world produce
at mathematical modelling and optimization quite
unexpected challenges. Accounting for scale of data sets,
their heterogeneity and multi-physics frameworks
prove necessary there at creating practically useful models.
An experience with a suite of problems faced at chocolate
manufacturing processes will serve as illustration.
